Several people have approached our Coffee Hour ministry leader, Liisa Binebrink, about what types of food would be most helpful to bring to our Coffee Hour freezer-stocking event, which will take place throughout the month of September. Here are some ideas she and Gale DeHaven have put together!

Foods that can be frozen
Macaroni and cheese
Quiches of any kind
Breakfast casseroles
French toast casseroles
Lasagna or other baked pasta dishes
Any sweets – cookies, cakes, scones, muffins
Foods to serve fresh
Fruit, veggies, hummus
Salads, including tossed green salad, egg salad, chicken salad, pasta salad
Cheese and/or charcuterie platters
Recipes to try
Easy Breakfast Casserole
32 oz diced hash brown potatoes, defrosted overnight in fridge
one small onion, 1/2 green pepper, 1/2 red pepper, 4 stalks of green onion,
handful fresh spinach – all chopped up
2 cups shredded cheddar cheese, divided
2 cups half and half whisked into 12 eggs, add 1 tsp salt and dash of pepper
Fry hash browns in 3 tablespoons of butter or oil in a large pan. Add salt and pepper to taste. Layer hash browns in a 9×13 baking dish. Sprinkle half of shredded cheese on top of hash browns. Saute onions, peppers and other veggies and spread them on top of cheese/hash brown mix. Whisk 2 cups of half and half into 12 eggs and pour onto the casserole. Sprinkle remaining shredded cheese on top. Bake at 375F for about 45 minutes, the custard in the middle should be firm.
Monkey Bread
1 cup sugar
3 tablespoons ground cinnamon
3 cans refrigerated buttermilk biscuits (Pillsbury brand)
1/2 cup butter, melted
Mix sugar and cinnamon in a plastic bag. Cut biscuits into quarters and shake 6-8 pieces at a time in cinnamon sugar. Place pieces in a greased 10-cup Bundt pan. Mix leftover cinnamon sugar with melted butter and pour over biscuits, Bakes 35 min at 350F. Cool in the pan for 5 min, then invert onto a serving platter. This bread is not sliced but served by using tongs, with which people can tear off chunks of bread.
The average number of people coming to Coffee Hour is around 50, but there is no need to prepare one dish for that many people. Some recipes can be doubled, but that is not necessary. We usually have a variety of selections of food. We also have disposable casserole tins available for your use in the kitchen, so feel free to drop by and grab one!
